Gwangju Design Biennale Banquet

A banquet for 50 people was conceived without the use of any traditional eating or drinking implements. The meal was designed by Caroline Hobkinson with Blanch & Shock and is part of the 2011 Gwangju Design Biennale.

‘Food is Food is Not Food’

Conceptual food designer Caroline Hobkinson and chefs Blanch & Shock Food Design collaborated on a special banquet at The Gopher Hole as part of the 2011 Gwangju Design Biennale in South Korea. The banquet, part of the ‘Food Community’ section of the biennale, was performance designed by Caroline Hobkinson, with Blanch & Shock providing a menu based on food preservation.

The concept for the banquet was to rethink the way we eat and the menu was entirely without any traditional eating utensils.

So bread rolls were served floating from the ceiling to be injected with home-made marscapone, elderflower vinegar, and roasted-hay infused oil. The fish course was served on sticks, placed into each diner’s mouth – a kind of communion – with chalices of gazpacho soup that were shared around the table.

Pork rillette was served with tree branches for scraping and spearing, and a pudding of mint ice cream and strawberries in jelly was served in petri dishes to be sucked up off the dish.

The meal was recorded and the film and sculpture is currently on display at the Gwangju Design Biennale in South Korea.
